Prejean’s Restaurant Carencro is a Cajun restaurant owned by Tim Metcalf, Greg Metcalf and Ken Boudreaux. There are currently two locations; Broussard and Carencro and I visited the Carencro location. Prejean’s has been around for a very long time and is known for their Cajun cuisine.

I got behind the scene access where they prepare the food. There were different stations for each process of making the food. Everything was very neat, organized and clean. It was so cool to see my food being made right in front of me. I was shocked by how fast it was made and my food was ready in seconds.

I started off my meal with a sweet tea and the Gator Bites for an appetizer. The Gator Bites came with two sauces; house-made Thai pepper jelly and ranch. The Gator Bites were crispy and gave the perfect crunch. I loved the house-made Thai pepper jelly and it reminded me of chili sauce that is used for dipping egg rolls. I’m not a fan of ranch so I didn’t use it to dip my gator bites.

My main entree was their signature Shrimp Trinity: fried jumbo tail-on Gulf shrimp, one of their signature zydeco stuffed shrimp topped with cardinale sauce and  a portion of shrimp and grits, served with green beans. I am normally a shrimp and grits hater, I’ve just never liked it. However, the shrimps and grits here blew my mind. The waitress said it was like dirty shrimp and grit. It is filled with a burst of cajun spices.

I really like the texture of it too. You can definitely taste the black pepper in the shrimp and grits. I am definitely a fan of their shrimp and grits. I dipped the three fried shrimp in the house-made Thai chili sauce and it was a great combination. The side was green beans and it was your average green bean side.

The signature zydeco stuffed shrimp reminded me of a boudin ball. It had a spicy kick to it, which I loved. It had the perfect crunch on the outside and filled with goodness on the inside.
